This means warming the chocolate to a certain temperature before adding more unmelted chocolate and stirring until everything is melted and slightly cooled.

Fill the molds and allow the chocolate to sit for about five minutes at room temperature. The chocolate should start to set at that point. Tempering not only ensures that chocolate sets with that snap in the texture but also with the glossy sheen that makes chocolate products look so tempting. You won't need to add oil or any other components to the chocolate if you temper it correctly.
